It is impossible to distinguish Redbank House from its proprietor, Terry McCoy, a leading light in Ireland’s culinary scene. Immediately recognisable by his bright smile, twinkling dark eyes and distinguished grey pony-tail, Terry is a constant presence throughout the hotel, meeting and chatting to all his guests.
With particular enthusiasm for local produce, Chef-proprietor Terry McCoy sources all his meat from Kierans butchers in Drogheda, and the quality is outstanding. Fish of course comes from the local harbour, and Skerries is in the heart of Ireland’s vegetable growing region. Dishes are simple and wholesome – he does not do sun-dried tomatoes he told me as they were never a traditional or local food!
His commitment to Irish hospitality is evident in his work as a leading member of the Restaurants Association, the Eurotouques chefs and his television appearances. He has also represented Ireland at many international competitions.
Our breakfast the next morning was perfect, a hearty cooked breakfast, warm croissants and fresh fruit salad all set us up perfectly for the day’s journey ahead. This was the second time we had stayed at The Redbank and we found it as full of personality as ever, and would continue to highly recommend it.
For the people living in the lovely village of Skerries or nearby Lusk or Rush, this is an excellent restaurant to have on your doorstep. But there are many who come out from the city for a delicious gourmet break and stay over, and again it is quick and easy to reach from Dublin. For the visitor to Ireland who wants to get off the beaten track and out of the bustling city, Skerries is a perfect choice. Many people who are touring around Ireland like to choose The Redbank as their final overnight stay, then they can have a leisurely meal the night before, an early breakfast if necessary, and still make their morning flight home from Dublin airport.

It only took me forty minutes from Dublin’s city centre to the pretty seaside village of Skerries. The harbour is full of boats, the smell of fish and the cry of seagulls – already I was anticipating my catch of the day for dinner! There are plenty of interesting shops and little trendy eateries and the village was full of colourful floral hanging baskets and window boxes.ACCOMMODATION AT REDBANK HOUSE
There are eighteen bedrooms over three levels to choose from at this stylish townhouse. We enjoyed a spacious double room at the top of the house looking out over the street where our car was parked. Very comfortable bed and desk space with free internet access made this a perfect room for us. The Redbank Guesthouse is a member of Private Ireland, a collection of small family-owned properties that offer exceptionally friendly service and great food. We enjoyed a stroll around the village before heading back to prepare for our dinner at the famous Redbank Restaurant.DINING AT REDBANK HOUSE
There are a number of dinner menus at The Redbank Restaurant, all offering multiple choices and we noted that the special dinner, bed and breakfast package at only €99 was exceptionally good value. All the food is excellent here, carefully sourced and freshly prepared. We were shown into the lounge for a pre-dinner drink and to study the menu over a glass of bubbly.
